For the past couple months I've been following the Atkins diet guidelines … sometimes I "cheat" on weekends, but if you deny yourself something soooo long then you will end up binging on it and create more harm than good in the end. At the beginning I was very plain Jane; scrambled eggs and sliced cucumbers for breakfast, steamed broccoli and cauliflower with pork chops or chicken for lunch or dinner and of course salads. Plus I was walking about 3 miles a day for 5 days a week. Then the weather changed - rain. And in Oregon it is RAIN. I decided that it was time to do stretches inside our little apartment instead of walking in the rain and risking getting sick. Who wants to be sick, right? Gotta work and pay the bills!
Well, I'm no longer plain Jane when it comes to consuming. I prep and cook my weekly amount of food on weekends. What delicious things do I slave away in the kitchen for hours to create? Well, I'll tell you!
Breakfast:
I make a "breakfast biscuit" except that it's delicious and oh so healthy! Plus I eat it (2 of them) with a little bit of salsa and avocado. YUM!
Here's how I make them:
1. Cook up some bacon, I prefer thick cut hickory smoked.
2. Sauté some diced onions in the leftover bacon grease and as the onions are turing translucent add in some sliced petite mushrooms.
3. Cut up broccoli and cauliflower relatively small and steam them in the microwave for about 2 minutes.
4. Layer the sautéd onions and mushrooms, steamed broccoli and cauliflower, diced bacon, and sprinkle in some shredded cheese (I do mozzarella) and add a dash of salt and pepper into a cupcake pan (make sure you spray some type of cooking spray in them before you layer!)
5. Then comes the egg. I usually crack one egg at a time into a little bowl, scramble it up, then carefully pour it in. Be careful because depending on how much you put in each cup the entire egg won't fit. I generally use 7 eggs for my 12 cupcake tin. Plus make sure you stir each cupcake a little bit after pouring the egg in until it is about ½" from the top.
6. Bake at 375 degrees for about 25 minutes, pop them out of the tin, let them cool, then bag them and throw them in the fridge! I heat 2 up every morning for 30 seconds and they are perfect!
Lunch:
I slave away for hours for this one! It's my casserole and it's sooooo yummy!!!
1. Cook up some bacon, I prefer thick cut hickory smoked. (Do you see a pattern here? hehehe)
2. Sauté some diced onions in the leftover bacon grease and season with garlic salt and as the onions are turing translucent add in some sliced petite mushrooms.
3. Cut up broccoli and cauliflower into medium sized chunks so that they aren't too big that they don't get cooked.
4. Cook some chicken and season with salt, pepper, garlic salt, and olive oil. I like to use my George Foreman Grill for this.
5. Layer the chicken, bacon, onions, mushrooms, broccoli, and cauliflower in a big casserole pan and then make the sauce.
6. Melt 4 Tbsp of butter in a large sauce pan, once melted stir in 1 ½ cups heavy cream, 1 tsp dry mustard, and salt and pepper. Bring to a boil for about a minute, take off the heat and add 2 cups shredded cheddar and another cup of shredded cheese (I use Yancy Fancy's Steakhouse Onion and the Smoked Gouda - ½ cup of each) to add a zing!
7. Pour cheese sauce over the layered yummies and pop in the over for 45 minutes at 325 degrees.
I love to eat this heated up for my lunch; the sauce is thick but yet liquid and reminds me of a soup. YUM YUM!
Dinner:
After a long day at work, I just want something quick and easy so make my mini zucchini pizzas!
1. Slice up some zucchini (clean it first of course!)
2. Dab a little bit of marinara sauce on each slice.
3. Sprinkle a little bit of mozzarella cheese on top and then a slice of pepperoni and microwave for 1 minute. I lay a paper towel on top of them as they heat up so that they don't make a mess inside the microwave, plus it soaks up some of the pepperoni grease.
